Bacon Jalapeno Poppers


• 2 cups of grated cheddar cheese

• 4 ounces of cream cheese, softened

• 6 jalapeño peppers, seeded and halved

• 12 strips of bacon, partially cooked

• Aluminum foil


Preheat the broiler and line a baking sheet with aluminum foil. Partially cook the strips of bacon so they can easily be wrapped around the jalapeño halves. Halve the jalapeños and remove the seeds. In a bowl, combine the grated cheddar cheese and cream cheese. Mix well. Spread cheese mixture evenly in jalapeño halves. Wrap each half with a bacon slice and secure with a toothpick. Arrange on the prepared baking sheet and broil 4-5 minutes, turning once, until bacon is crispy.
