• 1 stick unsalted butter
• 1/3 cup packed light brown sugar
• 1 tsp. vanilla extract
• 8 oz. cream cheese, at room temperature
• 1/2 cup confectioners’ sugar
• Pinch of salt
• 3/4 cup semisweet mini chocolate chips
In a small saucepan, melt the butter and brown sugar together over medium heat, whisking continuously until the sugar dissolves. Remove from heat, stir in the vanilla, and allow to cool.
In a medium bowl, beat the mascarpone and confectioners’ sugar together for 60 seconds. Add the salt and cooled butter mixture, and beat for another 60 seconds. Fold in the chocolate chips. Top with additional chocolate chips if desired. Cover and refrigerate until ready to serve. Leave at room temperature 15 minutes before serving to soften.
