• 3/4 cup all purpose flour

• 1/4 teaspoon baking soda

• 3/4 teaspoon baking powder

• 3 tablespoons sugar

• 3/4 cup small curd cottage cheese

• 1/3 cup milk

• 2 tablespoons oil

• 3 eggs

DIRECTIONS:

In a medium bowl, whisk together the flour, baking soda, baking powder and sugar. In a large bowl, whisk together cottage cheese, milk, 1 tablespoon oil and eggs. Add dry ingredients to cottage cheese mixture. Whisk to bring mixture together, try not to over mix. Heat remaining oil in a large nonstick skillet over medium heat. Spoon 3 tablespoons of batter onto skillet. Cook until bubbles begin to set, about 1 to 2 minutes. Using a spatula flip pancakes and continue to cook another 2 minutes. Repeat until all the batter is used up.
