Pork Chops With Apple Cider Sauce

• 4 Thick Sliced Boneless Pork Loin Chops

• Salt & Pepper

• Olive Oil

• 2 Tbsp. Butter

• 1/2 Cup Onion, Minced

• 8 Sprigs Fresh Thyme

• 1/4 Cup Apple Cider Vinegar

• 1 Cup Apple Cider

• 1/2 Cup Vegetable Stock

DIRECTIONS:

Heat large pan over medium-high heat. Season chops with salt & pepper. Add oil to pan. Then chops & cook for 4 minutes. Turn & cook another 4 minutes. Remove from pan. Melt 1 Tablespoon butter in pan. Then add onions & 4 sprigs of thyme. Cook for two minutes. Add vinegar & boil until it’s almost gone, 3-4 minutes. Then add apple cider & vegetable stock. Simmer until the sauce is reduced by half. Remove thyme sprigs. Whisk remaining tablespoon of butter into sauce. Season with salt & pepper to taste. Spoon over pork chops, & serve immediately.
